Spinach Ring |

2 pounds fresh spinach or 2 packages frozen chopped spinach
4 tsp. ghee or butter
½ cup chopped onions
1 cup milk alternative or lowfat milk
1 tsp. salt
½ tsp. pepper
1 cup egg whites
½ tsp. nutmeg
2 Tbsp. chopped parsley
½ cup bread crumbs (gluten free if needed)
½ to 1 cup grated cheese alternative-sharper the better
Cook spinach until just tender. Chop spinach and squeeze out water. Grease ring mold or bundt cake pan, and dust with grated cheese. Saute onion in ghee for 5 minutes. Add spinach, milk alternative, salt, sugar, pepper, parsley, and nutmeg. Heat until boiling. Remove from heat. In a large bowl, beat egg whites lightly. Add bread crumbs and cheese. Carefully stir in spinach mixture. Put into mold. Bake at 350 degrees for 35-40 minutes until knife comes out clean.
Loosen around the edges and turn out on heated plate. Fill center with carrots and enjoy!
