Roasted Sweet Potatoes and Veggies

2 Medium Sweet Potatoes
3 Parsnips
2-3 cups green beans
1 yellow onion
Oil of choice or ghee
Herbs to taste: Oregano, Basil, Parsley, Rosemary, etc.
Salt to taste
Chick Peas, optional

Wash and chop first 4 ingredients. Place in casserole dish and toss with oil or ghee, herbs and salt. Place in oven on 425 degrees covered with tin foil for 45 minutes. Stir at half-way point and take off tin foil (as long as it doesn’t look dried out). During the last 5 minutes of cooking add the chick peas. Vegetables should be soft at this point.
