Gluten Free, Dairy Free, using vegetable purees
½ cup honey
½ cup peanut butter
½ cup applesauce
1 cup quinoa flour or buckwheat flour or other whole grain flour
¾ cup quinoa flakes (or other flour)
1 tsp baking soda
¼ tsp salt
Heat oven to 350 degrees. Beat honey, brown sugar, and peanut butter in bowl. Combine flour, quinoa flakes, baking soda and salt in small bowl. Add to mixture and beat until well blended. Drop by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 12 to 15 minutes or until light golden brown. Cool 1 minute before removing from cookie sheet.
Yields about 3 dozen small cookies.
