Dressing:
1/4 c fresh orange juice (could use other sweet fruit juice)
2 T extra virgin olive oil (or acceptable oil)
2 t honey (or other sweetener)
1/2 t salt
1 tsp apple cider vinegar
1/8 t freshly ground black pepper (optional)
Salad:
1 1/3 c uncooked quinoa
2 3/4 c water
1/2 t salt
1/2 c sliced green onions
1 c dried cranberries (try other dried fruit)
1/3 c chopped parsley (flat leaf Italian parsley) (other herbs??)
3 T toasted, sliced almonds (other nuts or seeds could be used)
1. Combine quinoa, water and salt in a large saucepan
2. Bring to boil
3. Cover and reduce heat, simmer 20 min. or until liquid is absorbed.
4. Remove from heat and cool to room temp.
5. Stir in dressing and remaining ingredients Cover and chill.
