6 cups cooked brown basmati rice (@3cups dry)
1.5-2lbs. chicken breast
1 head of broccoli
3 carrots
1 lemon
Curry seasoning to taste or turmeric, coriander, cumin, and cayenne pepper
1.5 cups snap peas
2.5cups bean sprouts
2 Tbsp Sesame Oil
¼ cup Wheat Free Tamari, less sodium
Cook brown rice in a ratio of 2 parts water to 1 part grain for 45-60 minutes or until done. While that is cooking trim the chicken and slice it into small wedges. Chop broccoli and carrots into bite size pieces and add to a large fry pan. Add the chicken to this. Add small amount of chicken broth to cook in. Add bean sprouts, snap peas, curry, juice from lemons, and sesame oil at the end and cook on low for an additional 2 minutes or so. Place over rice and serve.
