1 14oz can black beans drained
1 14oz can diced tomatoes
3 cups chicken broth
1 bunch Kale
1 onion, chopped
3 cloves garlic, chopped
1 Tbsp olive oil
1 poblano pepper (or green pepper)
1 red pepper
4 Tbsp parsley, chopped
1 lb. ground turkey breast
Salt and pepper to taste
Optional: turmeric, dill, nutmeg, ginger- great for digestion and reducing inflammation
Use a large soup pot and start to cook the onion and garlic in the olive oil. After about 5 minutes add the peppers and a small amount of chicken broth. Add spices and cook for another 5 minutes. Add the remaining chicken broth, tomatoes, salt, pepper, kale, and beans and simmer. In a different pan, cook the turkey and put into the large pot with everything else. Simmer the whole soup for about 40 minutes.
